Wifey , baby Leon and I attended his Gin school on a typical rainy Porto day which soon to became a funny, interesting slightly tipsy and educational afternoon.
We hands on crafted a unique Gin recipe with Travis’s guidance and distill it on the spot using tiny most adorable copper stills. Scoundrels recently became the official Gin brand of Porto’s soccer team and has a very interesting secret aged barrel Rum to hit the market soon. We left the still with two bottles of one of a kind self made Gin and baby Leon, AKA the cracker monster got his hands full of delicious crackers as well.

Few things are cooler in life than getting a peek under the hood of the distilling process. But designing and distilling your very own gin? It elevates that state of amazement to an entirely different level.
Travis led us through the process of designing a good gin. There were base recipes we could choose from and then add a personal *something something* to the mix. I headed straight for spicy and exotic, heavy on the ginger and cardamom.
Each student gets their own mini copper still, which is custom-built locally and quite charming. You feel a bit like a mad scientist dumping your carefully-measured ingredients into the ethanol mixture and waiting for the heads, heart and tails to run through the coil and into your beaker below. Diluting the mixture to hit that 42%ABV sweet spot was definitely a lesson in patience.
Bebé Picante---my Spicy Baby creation---isn't awesome gin. But it's interesting. And will make a great martini. I'm good with that.
The process of making something with your own hands is sheer joy. I think there's something inherent in all humans that makes us long to create meaningful things. Deep bows to Invicta Gin School for giving people the chance to learn and try and laugh and ask questions both stupid and important.
