Introducing Ruminate Rum: Our series of single cask, Pure Single Rums, that are finished in Portuguese fortified casks including Port, Moscatel, Madeira and Carcavelos. 

Our first release was described by international judges as having a smooth and elegant finish, which is high praise in the world of Rum and highlights our dedication to handcrafting limited edition single cask releases, in partnership with Portuguese fortified wine producers. 

This makes us unique as the world´s only Rum producer in history to focus on Portuguese fortified finishes.

Tawny Cask Finish

Elegant and complex this is the first Pure Single Rum to be distilled and matured in the city of Porto, in Portugal’s first urban distillery.

Produced using molasses in an open fermentation method and with our proprietary yeast blend, our Rum is double distilled in our German pot stills before starting in new American Oak casks and finishing in a Tawny cask.

Tawny Cask Finish - Cask Strength

For serious Rum drinkers, we have bottled a limited number at “Cask Strength” with ABV 60%.

Bottled at a cask strength of 120 proof this is his is an exceptional and elegant, high-ester rum with a beautiful balance of dried fruits, rich berries, vanilla and wood spice with a long finish and richness.

Ruby Cask Finish

Started in French Oak this is our first release of Pure Single Rum finished in a Ruby Port Cask that has been distilled and matured in the city of Porto, in Portugal’s first true urban distillery.

Bottled at 92 proof this a beautifully layered and complex, high ester rum with an elegant balance of dried plum, fig and wood spice with a wonderful long finish.

Ruby Cask Finish - Cask Strength

For serious Rum drinkers, we have bottled a limited number at “Cask Strength” with ABV 59%.

Bottled at a cask strength of 118 proof this a beautifully layered and complex, high ester rum with an elegant balance of dried plum, fig and wood spice with a wonderful long finish.

We moved here to create world-class Rum and harness the availability of blackstrap molasses, new oak coopered casks,  and Portuguese fortified wine casks, including those to produce Tawny and Ruby, from generational Port Wine producers.

We now make some of the rarest and most unique rums in the world.

Our brand RUMINATE®, defines what our Rum does when it is on its journey to perfection, as it meditates and muses in oak.

Our Rum is defined as Pure Single Rum under the Gargano Rum Classification, as it is made in one distillery using molasses and distilled in “Pot Stills”.

We do not focus on “age statements” as we do not believe that the age of a product defines its quality and our Rums are proof of that!

I visited the amazing distillery from Travis, who created a real bijou. It is located next to a beautiful park and walking distance from the FC Porto stadium (Dragon stadium). The gin and rum I've tasted were fantastic. I'll be back 😊

As a birthday treat we had a great time at INVICTA Gin school. Travis was brilliant giving great ideas to enable super gins for us both to produce. He was really helpful, knowledgable and extremely friendly. A lovely afternoon and very productive. Second to none experience. Fully recommend and we will be returning to make some more. Plus great Gins and Rum made here, just had to buy after extensive sample. Superb distillery in the heart of Porto.

This place is soooo worth your time. The Gin school which allows you craft your own Gin is an amazing way to spend your afternoon. So much fun and you go home with a craft Gin that you make yourself.The Gins that Travis makes are so good and his Rum? Amazing. Go try them. You won’t regret it. Travis has spent a lot of time perfecting his craft and it shows in all of his offerings.

Travis is officially Porto’s king of distillers.Wifey , baby Leon and I attended his Gin school on a typical rainy Porto day which soon to became a funny, interesting slightly tipsy and educational afternoon.We hands on crafted a unique Gin recipe with Travis’s guidance and distill it on the spot using tiny most adorable copper stills. Scoundrels recently became the official Gin brand of Porto’s soccer team and has a very interesting secret aged barrel Rum to hit the market soon. We left the still with two bottles of one of a kind self made Gin and baby Leon, AKA the cracker monster got his hands full of delicious crackers as well.Thanks Travis for a wonderful experience!

WHAT AN UNFORGETTABLE EXPERIENCE!Few things are cooler in life than getting a peek under the hood of the distilling process. But designing and distilling your very own gin? It elevates that state of amazement to an entirely different level. ⁠⁠Travis led us through the process of designing a good gin. There were base recipes we could choose from and then add a personal *something something* to the mix. I headed straight for spicy and exotic, heavy on the ginger and cardamom. ⁠⁠Each student gets their own mini copper still, which is custom-built locally and quite charming. You feel a bit like a mad scientist dumping your carefully-measured ingredients into the ethanol mixture and waiting for the heads, heart and tails to run through the coil and into your beaker below. Diluting the mixture to hit that 42%ABV sweet spot was definitely a lesson in patience.⁠⁠Bebé Picante---my Spicy Baby creation---isn't awesome gin. But it's interesting. And will make a great martini. I'm good with that.⁠⁠The process of making something with your own hands is sheer joy. I think there's something inherent in all humans that makes us long to create meaningful things. Deep bows to Invicta Gin School for giving people the chance to learn and try and laugh and ask questions both stupid and important.
